Because Food Should Be Pretty: Pumpkin Bread ala Lou
I always bake too much. Every recipe I have is doubled, and we are a family of four. So, I tend to make a lot of cards and, in this case, bread wrappers, and spread the lovin’ from my oven amongst friends.
Pumpkin Bread:
3 cups sugar
3 eggs
2 cups pumpkin
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1 cup oil
3 cups flour
3tsps nutmeg
1tsp ginger
2 tsp cloves
5 tsp cinnamon
Add oil to sugar and blend, whip in eggs. Add sifted dry ingredients. Stir in pumpkin. Put in greased and floured pan (bundt pan works nicely). Bake at 350 degrees for 1 hour and 15 minutes. Cool ten minutes in pan and remove. Can be made as muffins, just reduce the baking time.
For the top, I made a simple powdered sugar and milk glaze and then I sprinkled sugared almonds on top.

Oh thanks for posting that now! I have an MRI and cant eat before hand, and I am starving, and I LOVE pumpkin bread, you know I’ll be making it when I come home! mmmm

I have been sitting at my pc for the past hour just drooling over your blog. You are soooo talented and I love your work. I agree with the comment you made about the “brain sucking” post child birth. My Mom used to say with each child you have, there goes a piece of your brain (poor woman, she had 9 children!) I now know what she is talking about–I have 5 girls and 1 boy. My three youngest, Robert 11, Sarah-Michelle 7, and Katie 5 were all diagnosed with Autism. My first three, Ashley 22, Jessica 16, and Mary 13, are all straight A Honor Students. Did God have a plan for me or what?!! I treasure each day with each of my children and feel I have been truly blessed. I don’t have a whole lot of time to be creative, so I go surfing the internet at night when the kids are in bed looking for some inspiration. I am so glad I found you! You have the most beautiful children and your posts are certainly a work of beautiful art. Thanks for sharing!!

Shouldn’t be hard to half the recipes. Unless you just like spreading your lovin’ from the oven.
I’d say some Christmas goodies should be in the works soon.
